Hyacinth restaurant was founded in 2018 by Rikki Giambruno, formerly of Franny’s in Brooklyn, New York. In 2023 Hyacinth was passed down to founding member Abraham Gessesse.
Preparing both local and imported ingredients with techniques that are equal parts classic and innovative, the team at Hyacinth strives to emulate hole-in-the-wall European style dining with a touch of warm, Minnesota hospitality.
